Savory chicken muffins Recipe by rash


I Always love to try new recipes . Also I never try the exact recipe I see in internet. I use alternations, I try adding more things , some times what I tried comes better than what I expected. I always wanted to feed my family with nutritional foods. I always consider about hygiene, when I make food , probably I add spinach which I grew in my back yard because it's full of iron and very good for kids .

This pizza Muffins are one of the lazy ideas I got when I was thinking what to make for next day's breakfast. Also I wanted to do something with Whole wheat flour/ Atta flour As it will be healthier. So I thought to my self lets give it a try. To my surprise it was super soft and everyone in the family loved and it was super easy to make too.



Lets see how I made my morning breakfast routine quick. The before Night i decided to make the dough and filling so I thought it would be easier and time saving for me in the morning. My 3 year old son is still waking up 2-3 times at night so I don't get much sleep, probably I used to wake up at 6 or even if I wake up at 6.30 ill be able to prepare the morning meal before 7.45 because my hubby goes to work at 7.45.

this is is how I made the filling,

Chicken filling

  • Pre cooked chicken(marinated with salt, pepper, chili powder)
  • 3 large onions sliced.
  • 2 green chilies /Bell pepper with 3 colors.
  • Coriander leaves chopped hand full.
  • 2 tomatoes
Spices: chili flakes, oregano, garlic powder/chopped garlic, cumin powder 1/2 TSP, salt per taste

Method:

  • Heat the pan and add 2 table spoon of olive oil.
  • Add sliced onions and add a pinch of salt and let it cook, don't over cook .
  • Add garlic, tomatoes and all the spices mentioned and  sauté.
  • Now add bell pepper or capsicum and give it a mix.
  • Add shredded chicken pieces to that and quick mix.
Check the salt and  adjust the taste accordingly. Now the filling is ready .put it in a container once it's cool down and refrigerate.

Method of making the dough : 16 savory Muffins

Here I used whole wheat flour.

  • Whole wheat flour  3 cups
  • Salt 1 TSP
  • East 2 TSP
  • Butter 1 tbls
  • Warm milk 1/2 cup
  • Water to knead
  • Sugar 1 tbls
Method

  • Add all the dry ingredients in a bowl and mix it
  • Pour the warm milk and water little by little to the flour mixture and knead till you get a soft dough.
  • Once it's done cover it with a cling wrap. And refrigerate.
Next morning.

  • Take out the both filling and the dough from the refrigerator.
  • Apply some butter on the muffin tray.
  • Roll out the dough approximately 1cm height. and cut it with a tea cup size circle.
  • Place it one by one in the muffin tray 
  • Add some sauce on the bottom and put the filling.
  • Bake it for 15 mins in 165f.








Yummiliouse savory muffin is ready to serve hot in 30 mins in the morning. Save your time by planning your meal. And enjoy your morning without rush .
